Made using the same process used by the U.S. space program to make food for astronauts on past and present space missions.
How does it look and taste? Freeze-drying is like suspended animation because it keeps the food totally intact, but without the water. As you eat the food, your mouth rehydrates it, restoring it to it's original state so it looks and tastes just like the original.
Now for the science bit... how is it done? Freeze-drying, or lyophilization, removes water from the food by lowering the air pressure to a point where ice shifts from a solid to a gas. The food is placed in a vacuum chamber and frozen until the water crystallizes and the air-pressure is lowered, creating a vacuum, forcing the air out of the chamber. Next heat is applied, vaporizing the ice before finally a freezing coil traps the vaporized water. This process continues for hours, resulting in a perfect freeze-dried piece of food.
Freeze dried foods can be stored for many years without refridgeration as long as you keep them in an airtight, sealed container.
